for someone who can’t seem to eat vegetables daily (and not because I don’t like them they just don’t stalk me enough), this green smoothie is my cheat code.
In full transparency, the picture above is from 2 years ago and it popped up in my feed the other day which was perfect timing since I am in need of a rest reset for spring.
the ingredients are completely customizable and I experiment with whatever I have or feel that day. But this picture was definitely born of the below 3 ingredients.
Recipe:
- a handful of baby spinach
- some sprigs of mint
- half of a frozen banana
What I loved the most about this particular smoothie was the froth which was definitely achieved by the fresh baby spinach. Those minis have some juice! The trick is to use ’em asap and if you can get them from the farmers’ market you’re even luckier. if they go beyond 3 days just throw them in a freezer bag and freeze them. still good just not as good.
Add them to the bottom of your blender so the blade hits them first.
Next up is the frozen banana. I like my bananas not ripe and frozen. I do the prep ahead of time. I peel and cut in half a loaf, tribe, bunch, or whatever you like to call them and lay them on parchment paper, and put them in the freezer. My goal is to remember to check on them before they fall on the floor when my son opens the freezer in search of ice cream or something. Once frozen I put them in their parchment paper into a freezer bag. I have found that they get freezer burn if they are not wrapped in parchment paper.
Mint is the best part! It gives sweetness without sugar. (if you’re like me any sugar opens the door to more sugar and since I already don’t eat enough vegetables minimizing sugar is generally one of my better habits),
